Gir cows from Rajasthan produce A2 milk. That milk gets set into curd, the curd gets hand-churned into makhan, and the makhan gets slow-cooked over a wood fire into ghee. That is the Bilona method and it is the only way this ghee is made. The result is granular, deeply aromatic and noticeably richer than anything made by cream separation.
