Because it is raw, it behaves like a living food. It will crystallise in cooler months, sometimes into a solid, grainy block. This is not a defect and it is not sugar: it is glucose doing what glucose does. Stand the jar in warm water and it returns to liquid. Honey that never crystallises has almost always been heated hard enough to kill exactly the enzymes you are paying for.

How to check your honey is real

Raw forest honey varies batch to batch. Colour shifts with the season and the flowers the bees worked. It smells faintly of smoke and wildflower, not of sweetness alone. It should coat a spoon slowly and pull into a thread rather than run like water. Uniform colour and identical taste year-round is a sign of processing, not of quality.

Raw honey and heat

Stir it into warm water rather than boiling water, and add it to food after cooking rather than during. Heat above roughly 40°C undoes the enzymes and aroma that make raw honey worth buying in the first place.
