Honey lemon ginger tea is three ingredients and one temperature rule. Most people boil all of it together, which is the one thing you should not do. Heat above roughly 40C begins degrading the enzymes and aroma compounds that make raw honey different from sugar syrup, and boiling lemon juice flattens both its flavour and its vitamin C.
The Order That Matters
Simmer the ginger. Take the pan off the heat. Let it cool for two to three minutes. Then add lemon juice, and only after that the honey. That sequence gets you the full ginger extraction while keeping the lemon bright and the honey intact.
Ingredients
Makes 2 cups
- 2 cups water
- 2 inch piece fresh ginger, thinly sliced or grated
- 2 tablespoons fresh lemon juice, about 1 lemon

How to Make Honey Lemon Ginger Tea
- Simmer the ginger. Bring the water to a boil, add the sliced ginger and any optional spices, then reduce and simmer gently for 8 to 10 minutes. Grated ginger extracts faster than sliced.
- Strain into cups or a jug.
- Cool briefly. Wait 2 to 3 minutes, until the liquid is hot but comfortably drinkable rather than scalding. This is roughly 50 to 60C.
- Add lemon juice and stir.
- Add honey last and stir until dissolved. Taste and adjust.
Three Variations
- For a sore throat. Add a pinch of turmeric and a crushed black peppercorn while simmering. The pepper helps with turmeric absorption.
- For a blocked nose. Add 3 tulsi leaves and 2 crushed cardamom pods to the simmer.
- Cold version. Simmer, strain, chill fully, then add lemon and honey. A good summer drink and the honey is never heated at all.
Tips
- Never boil the honey. If the tea is too hot to sip comfortably, it is too hot for raw honey.
- Fresh lemon only. Bottled lemon juice tastes dull and has lost most of its vitamin C.
- Grate the ginger for a stronger brew. More surface area means faster, sharper extraction.
- Do not over simmer. Past 15 minutes ginger turns harsh and slightly bitter.
- Make a batch. Refrigerate the strained ginger water for up to 3 days and add lemon and honey per cup as you drink it.
Why Raw Honey
