Ghee Dosa Recipe: Crisp Golden Nei Dosa at Home

Ghee dosa is a plain dosa cooked with generous A2 desi cow ghee instead of oil, and the difference is not subtle. Ghee browns the surface in a way oil does not, giving a nutty aroma and a deeper golden crust. Nothing else changes. Which means if your ghee dosa is not crisp, the problem is your batter or your tawa, not the ghee.

Batter, Tawa, Heat

Three variables decide every dosa. The batter must be smooth and pourable, roughly the consistency of thin cream, and properly fermented so it is light and slightly sour. The tawa must be seasoned and evenly hot. And the heat has to drop when you pour and rise while it cooks. Most home dosa failures come from a tawa that is either too cold or too hot at the moment the batter hits it.

For the Batter

  • 3 cups dosa rice or parboiled rice
  • 3/4 cup urad dal (split, skinless)
  • 1/2 teaspoon fenugreek seeds
  • 1/4 cup thick poha (flattened rice), optional, for crispness
  • Salt to taste
  • Water as needed

How to Make Ghee Dosa

  1. Soak. Soak the rice separately, and the urad dal with fenugreek seeds together, for 5 to 6 hours. Soak the poha for 30 minutes before grinding.
  2. Grind. Grind the urad dal first to a light, fluffy paste, using cold water. Then grind the rice with the poha to a slightly grainy paste. Combine both, add salt, and mix well with your hand.
  3. Ferment. Cover loosely and leave 8 to 12 hours in a warm place until the batter rises and smells pleasantly sour. In cold weather, keep it inside an oven with the light on.
  4. Adjust consistency. Stir the batter down and thin it with water until it pours in a smooth ribbon. Thick batter gives soft dosa, not crisp ones.
  5. Prepare the tawa. Heat until a few drops of water sizzle and evaporate within 2 seconds. Cut an onion half, dip it in ghee, and wipe the surface. This is the old trick that stops the first dosa sticking.
  6. Pour and spread. Lower the heat slightly. Pour a ladle at the centre and spread outward in a quick spiral. Do not press.
  7. Add the ghee. Raise the heat to medium high and drizzle a generous teaspoon of ghee around the edges and over the surface.
  8. Cook and fold. Cook 1 to 2 minutes until the edges lift and the base is deep golden. Ghee dosa is usually not flipped. Fold and serve immediately.

Tips

  • Sprinkle water between dosa. A splash on the hot tawa, wiped off with a cloth, resets the temperature so each dosa spreads evenly.
  • The first dosa is always sacrificial. Every cook knows this. It seasons the tawa.
  • Poha for crispness. A quarter cup makes a noticeable difference to how long the dosa stays crisp.
  • Ghee at the edges. Drizzling around the rim lets it seep under and crisp the base rather than pooling on top.
  • Do not over ferment in summer. Past about 12 hours in warm weather the batter turns too sour and the dosa will not brown well.

Why Ghee Instead of Oil

Ghee contains milk solids that brown through the Maillard reaction, producing the nutty aroma and golden colour that define a ghee dosa. Refined oil has nothing to brown, so it only conducts heat. Why is my ghee dosa not crisp?
