Honey chilli chicken lives or dies on one thing: whether the chicken is still crisp when it reaches the table. Restaurants manage it with a double fry and by tossing the chicken in the sauce for only a few seconds. The other detail worth getting right is when the honey goes in. Add raw honey too early and you cook off both the flavour and most of what makes raw honey worth using.
The Two Rules for Crisp Chicken
- Double fry. Fry once at medium heat to cook the chicken through, rest it for five minutes, then fry again at high heat for 60 to 90 seconds. The second fry drives out surface moisture and sets the crust.
- Toss fast, serve immediately. The sauce should coat the chicken in under 30 seconds on high heat. Any longer and the coating starts absorbing liquid and softens.

Makes 3 to 4 servings
For the Chicken
- 500g boneless chicken, cut into strips
- 3 tablespoons cornflour
- 2 tablespoons maida or rice flour
- 1 egg white
- 1/2 teaspoon salt, 1/2 teaspoon white pepper
- 1 teaspoon soy sauce
- Cold-pressed groundnut oil for frying
For the Sauce
- 3 tablespoons Rulife Wild Forest Honey
- 2 tablespoons red chilli sauce
- 1 tablespoon soy sauce
- 1 tablespoon vinegar
- 1 tablespoon tomato ketchup
- 1 tablespoon garlic, finely chopped
- 1 teaspoon ginger, finely chopped
- 2 dry red chillies, broken
- 1 capsicum, cubed
- 2 spring onions, chopped, whites and greens separated
- 1 teaspoon toasted sesame seeds
How to Make Honey Chilli Chicken
- Marinate. Mix the chicken with cornflour, maida, egg white, salt, white pepper and soy sauce. Rest 20 minutes. The coating should be thick and clinging, not runny.
- First fry. Heat oil to medium. Fry the chicken in batches for 4 to 5 minutes until pale golden and cooked through. Drain and rest 5 minutes.
- Second fry. Raise the heat to high. Fry the chicken again for 60 to 90 seconds until deep golden and crisp. Drain on a rack, not on paper, so steam escapes.
- Start the sauce. In a wok, heat 1 tablespoon oil on high. Add garlic, ginger and dry red chillies and stir for 20 seconds.
- Add vegetables. Toss in the spring onion whites and capsicum and stir fry 1 minute. They should stay crunchy.
- Build the sauce. Add chilli sauce, soy sauce, vinegar and ketchup. Let it bubble for 30 seconds.
- Honey last. Turn the heat to low and stir in the honey. Do not let it boil hard.
- Toss and serve. Raise the heat, add the fried chicken, and toss for 20 to 30 seconds until coated. Finish with spring onion greens and sesame seeds. Serve at once.
Tips
- Rest between fries. Those five minutes let internal steam escape, which is what makes the second fry work.
- Drain on a rack. Paper towels trap steam under the chicken and soften the base.
- Keep the vegetables raw at the edges. Capsicum should still snap. Overcooked, it leaks water into the sauce.
- Adjust the sweet and sour. Taste before adding the chicken. More vinegar for sharpness, more honey for a rounder finish.
- Do not make it ahead. This dish has a ten minute window. Fry everything in advance if you like, but sauce it at the last second.
Why Raw Honey, and Why Last
