Sooji halwa is the fastest Indian dessert worth making, and the one most often ruined by a single mistake: adding cold liquid to hot roasted sooji. That is what makes lumps. Keep the liquid hot, pour it slowly, and stir hard, and you get the fluffy, ghee-glossed sheera served as prasad across India. Made properly with A2 desi cow ghee.
The Ratio to Remember
One part sooji, one part sugar, three parts liquid, all by volume. For a richer halwa use half a part ghee to one part sooji. Water gives a lighter, more traditional prasad-style halwa, while milk gives a richer one. Many families use half and half.
Ingredients
Makes 4 servings
- 1 cup sooji (semolina or rava), fine or medium
- 1/2 cup Rulife A2 Desi Cow Ghee
- 1 cup sugar
- 3 cups water, or 1.5 cups water plus 1.5 cups milk
- 1/2 teaspoon cardamom powder
- 10 cashews and 10 almonds, chopped
- 1 tablespoon raisins
- Pinch of saffron, optional
How to Make Sooji Halwa
- Heat the liquid first. Bring the water, and milk if using, with the sugar and saffron to a boil in a separate pan. Keep it simmering. This step is the whole recipe.
- Fry the nuts. Melt the ghee in a heavy kadai, fry the cashews, almonds and raisins until golden, and lift them out.
- Roast the sooji. Add the sooji to the same ghee. Roast on low to medium-low for 8 to 10 minutes, stirring constantly, until it turns pale golden and smells toasty. Do not let it brown.
- Combine. Lower the heat. Pour the hot sugar liquid in slowly while stirring vigorously with the other hand. It will splutter and seize, but keep stirring and it comes together.
- Cook down. Simmer 4 to 5 minutes, stirring, until the halwa thickens and pulls away from the sides of the pan and the ghee starts to glisten.
- Finish. Add cardamom and the fried nuts. Rest covered for 3 minutes, then fluff and serve warm.
Tips
- Hot liquid, always. This single rule prevents lumps. If lumps still form, mash them against the side of the pan immediately while it is loose.
- Do not over-roast. Sooji should go pale gold, not brown. Brown sooji gives a bitter halwa.
- Rest before serving. Three covered minutes lets the sooji finish absorbing and the halwa fluff up.
- Too dry? Add a splash of hot milk and stir. Too wet? Cook a couple of minutes longer.
- For kesari bath, use more saffron and a pinch of cardamom, and cook it slightly looser.
Why Ghee Matters
