Moong Dal Halwa Recipe: Halwai-Style, Grainy and Rich

Moong dal halwa is the most demanding halwa in the Indian repertoire and there is no way around it. The dal has to be roasted in ghee for 35 to 45 minutes, stirred almost continuously, until it goes from a pale wet paste to a loose, fragrant, sandy mass. Rush it and you get a gluey pudding. Do it properly and you get the grainy, ghee-rich halwa served at Rajasthani weddings. This recipe uses A2 desi cow ghee generously, because the roasting fat is the flavour.

Why the Long Roast Matters

Soaked, ground moong dal is mostly water and raw starch. Heat plus ghee drives off that moisture and toasts the starch, which is what creates the separate, grainy texture and the nutty aroma. There is no shortcut. No amount of extra ghee or milk at the end will fix under-roasted dal. If your halwa tastes raw or feels like paste, the roast was too short.

Ingredients

Makes 6 servings

  • 1 cup yellow moong dal, soaked 4 hours
  • 3/4 cup Rulife A2 Desi Cow Ghee
  • 1 cup sugar
  • 1.5 cups water
  • 1/2 cup whole milk
  • 1/4 teaspoon saffron strands
  • 1/2 teaspoon cardamom powder
  • 2 tablespoons almonds, slivered
  • 2 tablespoons cashews, chopped
  • 1 tablespoon raisins

How to Make Moong Dal Halwa

  1. Soak and grind. Soak the moong dal 4 hours, drain completely, and grind to a coarse, thick paste with as little water as possible. Coarse is important, because a smooth batter gives pasty halwa.
  2. Start the roast. Heat the ghee in a heavy kadai. Add the dal paste and stir to coat.
  3. Keep stirring. Roast on low to medium-low for 35 to 45 minutes. It will pass through stages: a sticky lump, then a mass that clings to the pan, then it loosens, then it turns golden and sandy and the ghee visibly separates. That separation is your finish line.
  4. Warm the liquids. Meanwhile heat the water, milk, sugar and saffron together until the sugar dissolves. Keep it hot.
  5. Combine carefully. Pour the hot liquid into the roasted dal a little at a time, stirring hard. It will splutter aggressively. Cold liquid into hot dal makes lumps, so keep it hot.
  6. Thicken. Cook 8 to 10 minutes more until the halwa absorbs everything and starts leaving the sides of the pan again.
  7. Finish. Stir in cardamom and the nuts fried in a little ghee. Serve warm.

Tips

  • Use a heavy kadai. Thin pans create hot spots and the dal scorches before it roasts.
  • Grind coarse and dry. Excess water in the paste adds 15 minutes to the roast for no benefit.
  • Do not walk away. The last ten minutes of roasting are when it goes from perfect to burnt very fast.
  • Ghee is structural. Three-quarters of a cup sounds like a lot. It is correct. Halve it and the dal will not roast, it will just dry out.
  • Shortcut that works. Dry-roast the drained dal briefly before grinding to cut a few minutes off the kadai time.
