Gajar Ka Halwa Recipe: Slow-Cooked Carrot Halwa with Ghee

Real gajar ka halwa is a winter dish because it depends on one ingredient you only get in winter: the short, deep red delhi carrot. Orange carrots the rest of the year make a perfectly nice halwa, but a paler, more watery one. The classic method is milk reduced slowly with grated carrot until it disappears entirely, then finished in A2 desi cow ghee.

Two Methods, Honestly Compared

The slow method cooks grated carrot in full-fat milk for 45 to 60 minutes until the milk fully evaporates. This is the traditional version and it tastes noticeably better, because the milk sugars caramelise into the carrot.

The khoya shortcut sautés the carrot in ghee, adds sugar and crumbled khoya, and is done in 25 minutes. Use it on a weeknight. It is good, not great.

Ingredients

Makes 5 to 6 servings

  • 1 kg red carrots, peeled and grated (about 6 cups)
  • 1 litre full-fat milk
  • 3/4 cup sugar
  • 5 tablespoons Rulife A2 Desi Cow Ghee
  • 1/2 cup khoya (mawa), crumbled, optional but recommended
  • 1/2 teaspoon cardamom powder
  • 10 almonds and 10 cashews, slivered
  • 1 tablespoon raisins
  • Pinch of saffron, optional

How to Make Gajar Ka Halwa

  1. Grate. Use the medium side of the grater. Very fine grating turns to mush, and coarse stays stringy.
  2. Reduce with milk. Combine grated carrot and milk in a heavy kadai. Bring to a boil, then simmer on medium-low for 45 to 60 minutes, stirring every few minutes, until the milk has almost entirely evaporated.
  3. Add sugar. Stir in the sugar. The mixture will loosen again as the sugar draws out water, so keep cooking until it dries back down, about 10 minutes.
  4. Add the ghee. Stir in the ghee and cook on medium for 8 to 10 minutes, stirring, until the halwa darkens, glosses, and the ghee visibly separates at the edges.
  5. Finish. Fold in khoya, cardamom and saffron. Cook 3 more minutes.
  6. Top. Fry the nuts and raisins in a teaspoon of ghee and scatter over. Serve warm.

Tips

  • Red carrots if you can get them. Delhi or Rajasthani red carrots are sweeter, less watery, and give the deep colour.
  • Full-fat milk only. Toned milk gives a thin halwa with no richness.
  • Sugar after the milk reduces. Added early, it releases water and doubles your cooking time.
  • Heavy pan, low heat. Milk and grated carrot catch and scorch easily.
  • Pressure cooker shortcut. Cook carrot and milk for 2 whistles, then open and reduce on high. Saves about 25 minutes.

Why Ghee, Not Butter
