Besan Ladoo Recipe: Perfectly Roasted, Never Raw

Besan ladoo has four ingredients and one skill: knowing when the besan is done. Under-roast it and the ladoo taste raw and chalky no matter how much sugar you add. Over-roast and they turn bitter. The tell is aroma rather than colour, and it arrives suddenly. This recipe uses A2 desi cow ghee, which is both the roasting medium and the only binder.

How to Know the Besan Is Roasted

Three signals, in order of reliability:

  • Aroma. Around the 15 minute mark the smell shifts from raw and floury to distinctly nutty, almost like roasted peanuts. This is the real test.
  • Texture. The mixture loosens. Stiff paste becomes a flowing, ribbon-like batter as the besan releases the ghee back.
  • Colour. It darkens to a warm golden-brown. This is the least reliable signal, because ghee makes it look darker than it is.

Ingredients

Makes about 15 ladoo

  • 2 cups besan (gram flour), preferably coarse ladoo besan
  • 3/4 cup Rulife A2 Desi Cow Ghee
  • 1 cup powdered sugar (boora or icing sugar)
  • 1 teaspoon cardamom powder
  • 2 tablespoons almonds or pistachios, slivered
  • 2 tablespoons melon seeds (magaz), optional

How to Make Besan Ladoo

  1. Melt the ghee in a heavy kadai on low heat.
  2. Add the besan and stir to combine. It will look like a thick, stiff paste at first.
  3. Roast low and slow for 18 to 22 minutes, stirring almost constantly and scraping the base. Do not raise the heat to speed this up, because besan scorches instantly.
  4. Watch for the change. The paste will loosen into a flowing batter and the smell will turn nutty. That is your finish point.
  5. Cool it down. Transfer to a wide plate and cool until just warm to the touch, about 15 minutes. Sugar added to hot besan melts and makes the ladoo hard and sticky.
  6. Add sugar and flavour. Mix in the powdered sugar, cardamom, nuts and melon seeds thoroughly.
  7. Shape. Take small portions and press firmly between your palms into balls. Press hard, because loose pressure means crumbly ladoo.

Tips

  • Coarse besan is better. Ladoo besan (motta besan) gives that classic slightly grainy bite. Fine besan works but yields a denser ladoo.
  • Low heat, no exceptions. Twenty minutes on low beats ten on medium every time.
  • Powdered sugar, not granulated. Granulated sugar will not dissolve and you get a gritty ladoo.
  • Fix crumbly ladoo. Warm 2 tablespoons of ghee and work it in, then reshape.
  • Fix sticky ladoo. This means too much ghee, or you shaped them while too warm. Add a spoon of roasted besan and let it cool longer.

With only four ingredients there is nowhere for a poor ghee to hide. Why do my besan ladoo taste raw?

Under-roasted besan. Go by smell, because it must turn clearly nutty, which usually takes at least 18 minutes on low heat.

Why are my besan ladoo not binding?

Not enough ghee, or you did not press firmly enough. Warm a couple of tablespoons of ghee, mix in, and reshape with real pressure.

Can I use less ghee?

A little, but ghee is the only binder in this recipe. Below about half a cup per 2 cups besan the ladoo will not hold together.

How long do besan ladoo last?

Two to three weeks in an airtight container at room temperature. They do not need refrigeration and harden if you refrigerate them.

Can I use jaggery powder instead of sugar?

Yes. Use finely powdered jaggery, add it only when the besan is properly cooled, and expect a darker, deeper-flavoured ladoo.
