Honey is the only food humans eat that is produced by an insect and requires no processing at all to be edible. The way bees make it is genuinely remarkable — and once you know the process, you understand exactly why raw honey and heavily processed honey are not the same product.
Step 1: Collecting Nectar
Forager bees visit flowers and draw up nectar — a thin, sugary liquid that is roughly 70–80% water. They store it in a separate stomach, the honey stomach or crop, which is used purely for transport, not digestion.

This is the step that turns nectar into something else. While carrying the nectar, the bee adds enzymes from its own glands — chiefly invertase, which splits the sucrose in nectar into simpler glucose and fructose, and glucose oxidase, which produces small amounts of gluconic acid and hydrogen peroxide.
Those two enzymes are why honey is acidic and mildly antibacterial, and why it keeps almost indefinitely. They are also the first thing destroyed when honey is later heated — which is the whole argument for raw honey.
Step 3: Passing It On
Back at the hive, the forager passes the nectar mouth-to-mouth to a house bee. It may be passed between several bees, each adding more enzymes and beginning to reduce the water content.
Step 4: Drying It Out
The bees deposit the nectar into the wax honeycomb cells, then fan it with their wings — thousands of them, continuously — to evaporate water.
Nectar goes in at around 70–80% water. Bees bring it down to about 17–18%. That low moisture is precisely why honey does not spoil: there is not enough water for bacteria or mould to survive.
Step 5: Capping the Comb
Once the moisture is low enough, the bees seal each cell with a thin wax cap. Capped honey is finished honey, stored as the colony's own winter food supply. Honey is only harvested from capped comb — uncapped honey still holds too much water and will ferment.

- The result is stable, uniform, permanently clear — and much closer to sugar syrup than to what left the hive.
